Welcome to my recipe section, here you will find my healthy recipes.
I bake cakes, Scones, Brownies, Bread etc, and in these recipes I do not use Sugar, Salt, Wheat or Gluten or dairy products. So they are suitable for Coeliac's, Diabetics, Chronic fatigue sufferers and for those with Dairy intolerances, I do use eggs but for most of my recipes they can be replaced with egg replacer to be made suitable for vegans. All my recipes are Vegetarian.
For many years I have suffered with chronic fatigue, although never really considering that anything was wrong, I thought everyone needs 12 hours of sleep a night and everyone get completely exhausted every so often.
I did however notice that something was wrong whilst living in a small caravan for two years.
Having only basic cooking facilities I found it easier to cook pasta meals on the hob and toast and lots of cheese sandwiches etc, this resulted in a large wheat and dairy intake and left me completely exhausted, even after a night sleep I was too tired to get up to go to work.
After realizing that I possibly had a wheat intolerance, I started reducing it, but I didn’t really notice much change, I did however pay a lot of attention to how I felt after eating, I soon realized that the cheese sandwiches were not doing me any favours so I changed to crackers and cheese, this did not help.
It wasn’t until I stopped having wheat and dairy in my diet altogether that I realized that I had an intolerance to wheat and dairy.
From giving up dairy and wheat I also gave up sugar (only because everything that has wheat and dairy has sugar) I have felt amazingly well since removing these from my diet and this is how my recipe section was born, I have found that the only way forward to avoid wheat (gluten) Dairy and sugar is to cook yourself, this is what I do, and I now have a great desire to share my cooking delights.
