Sweet and spicy Parsnip soup

Gluten, Dairy and sugar free sweet and spicy parsnip soup.

500g Carrots.

500g Parsnips.

1/2 Leek.

4 pieces of Celery.

2 large potatoes.

1 large chunk of Ginger.

5 cloves of Garlic.

1 onion.

1 tsp of Dil.

1 tsp of Curry powder.

1 tsp of Caraway seeds.

1 tsp of Basil.

1 1/2 Ltr of Filtered or spring water.

Peal the potatoes, Carrots, Parsnips, Garlic, Onion, and Ginger. Grate the Carrots, Ginger, and the Parsnips; chop up the potatoes, Onion, Garlic, Celery, and Leek. Add all the ingredients to a large saucepan and simmer for forty minutes. Using a hand held liquidiser grind up the mix to form the soup. Water down if you prefer it not so thick. Makes about 4 Litres.
