Cacao Ginger Brownies
Gluten, Dairy and Sugar Free Cacao Ginger Brownies.
200g dried dates
1 apple
Grated zest and juice of 2 X oranges
Large chunk of ginger
4 eggs
4 tsp baking powder
300g rice flour
1 tsp mixed spice
1 tsp nutmeg
2 tsp turmeric
3 tbsp of cacao powder
1/2 cup of sunflower oil
1 tbsp of hemp oil
1 tbsp of flax oil
1/2 cup of filtered water
Prepare the zest and juice of the oranges.
Place the dates and water in a saucepan and simmer for ten minutes, stirring occasionally. Peel the ginger and apple and grate and stir into the date mix.
Liquidize the mix to make a paste. Add this mix to a mixing bowl and then add all the other ingredients and mix together by hand.
Using a baking tray of 8 ½” x 11” x 2” line the tray with baking paper and add the ingredients and place in a pre heated oven at 200c for 30 minutes then turn down to 160c and continue to bake for a further 20 minutes.
When cooked place on a wire tray to cool down.
The brownies have a spongy texture and are light and spicy with lots of flavour.
