Gluten, Dairy & Sugar free mince Pies

 

Gluten, dairy and sugar free, and suitable for vegans,

 

"Mince Pies"

1 x Gluten and dairy free pastry pack.

25g ground almonds

50g dried chopped dates

1 large grated carrot

1 chunk of root ginger

50g sultanas

50g raisins

50g chopped prunes

50g mix fruit and peal

1 apple

1/2 tsp nutmeg

1/2 tsp ground ginger

1/2 tsp mixed spice

1 small glass of port

½ cup spring or filtered water

 

Put the dates and water in a saucepan and simmer for 10 minutes, stirring often. Turn off the heat, peal and grate the apple and peal and grate the ginger, add both to the date mix, Stir all together.

Cut up the prunes and remove the stones, pop the prunes, Sultanas, raisons and mix fruit and peal to a small bowl and pore over the port and leave to stand.

Peal and grate the carrot.

Add all the ingrediance to a mixing bowl and mix together with a wooden spoon.

Roll out the pastry and cut out circles and add to a pie tray, fill each pie with the fruit mix and add a pastry lid.

cook in a pre heated oven at 200c for 20 minutes
